    For an amazing effect, you could have dusted it with alternating bars of cocoa powder AND powdered sugar by using parchment to keep the lines straight. I bet that would look amazing….at least for an initial presentation. Or you could dust a little powdered sugar on top of the cocoa powder if you want to keep it from turning transparent too quickly. Of course, if you aren't presenting to a crowd, you just dust your individual servings.

    Try wax paper instead of parchment paper on the bottom or spray non-stick cooking spray on the parchment so it does not stick to the mousse.

    Valentine’s Day became what it is (Chocolate, flowers, cards and trinkets) with that romantic notion during the Victorian era. Because of Valentines’s story in Ancient Rome, they associated couples to Valentines’s day. Anywho, the cards, flowers and chocolates were popular in Victorian times because of courtships and courting a lady of interest. Chocolate at the time was a rare item and makes for a very special treat for the lady in court. The cards, was always given with a message and name for consideration to see. Flowers was also a very high status gift.

    But I don’t know all of its details but it did came from the courting in Victorian times where it became more more of the holiday today.

    This is exactly the pudding with gelatine that I have been eating since I was a kid. One of the dairy factories here where I live has been producing it for years. They make vanilla and chestnut flavor and all three have slightly different textures.

    The connection between chocolate and Valentine's Day is both historic and scientific. Valentine's day is based on the Pagan holiday Lupercalia (if you've seen Chilling Adventures of Sabrina, it's portrayal is actually pretty close to the old traditions) which was essentially one big fertility festival in ancient Rome. Chocolate has long been considered an aphrodisiac given it's effectiveness of triggering endorphins, hence the connection.

    For future reference…Use a plastic cling wrap to cover any pudding/mouse you make instead of parchment. The cling wrap won't stick to the mouse as much. Also do NOT waste chocolate mouse like you did by throwing that paper away ever again!!! Use a spatula and rescue the mouse and nom it. 🙂

    So, to draw the connection between Valentine's Day and chocolate… Chocolate was promoted as an aphrodisiac when it was introduced to Europe post Central American conquest. In central America it was likely used as a ritual beverages for medicine, political, and social ceremonies. That mystical aura was promoted when it was brought to Europe. Side note, potatoes, tomatoes, chilies, and corn were also "magical foods" with "special powers" from the New World. Chocolate kept it's association with love making, potatoes did not, but it was originally to promote the man's libido. Only later was the connection of chocolate to female desire developed. That may be the chocolate importers, processors, and marketers selling chocolate to men as gifts for women. There is correlation between serotonin and some compounds in chocolate, however the connection of sugar to positive feelings in brain chemistry is more firmly established. The connection between love and chocolate is 9 parts psudo-science with cultural imperialism and social expectations and 1 part maybe actual science because our cultural attachment to chocolate and roses and physical attraction to sugar, red, and good smells does actually have an effect on our brains.

    not sure if this is true but..Chocolate is considered aphrodisiac food since the time of Aztecs. Chocolate is said to contain substance that inflames desire and make the beloved one more open to romance. In olden days, this resulted in the tradition in European royalty to give their lovers chocolates mixed with amber to stimulate their love.
